Dalvai \u00e8 lo chef della Locanda Alpina Dorfner a Casignano\/Montagna e ha molti anni di esperienza nella preparazione della selvaggina.<\/p>\n<p>Sotto la <strong>guida esperta<\/strong> del maestro cuoco, la prima sera i partecipanti hanno sezionato un capo di selvaggina calva. Successivamente, il gruppo ha cucinato e assaggiato il fegato e la lingua del selvatico finemente preparati. I partecipanti hanno anche gustato un\u2019ottima tartara di coscia di cervo.<\/p>\n<p>La seconda sera, il menu prevedeva<strong> otto piatti a base di diversi tagli di carne<\/strong>. I partecipanti hanno dovuto mettersi direttamente in gioco nella preparazione. Arrosto rosato di noce di cervo su purea di radici di prezzemolo e salsa di mirtilli rossi, tagliolini fatti in casa con rag\u00f9 a pezzetti e funghi di Aldino saltati e ossobuco brasato al forno con salsa di verdure su risotto alle erbe sono solo alcuni dei gustosi piatti preparati dai cacciatori sotto l\u2019attenta guida dello chef Anton Dalvai.<\/p>\n<p>La seconda edizione del corso di cucina a base di selvaggina avr\u00e0 luogo alla fine di novembre. Il workshop \u00e8 gi\u00e0 al completo. Altre edizioni sono previste per il 2022.<\/p>\n<p>&nbsp;<\/p>\n<h2><strong>Tre nozioni importanti sulla carne di selvaggina<\/strong><\/h2>\n<ul>\n<li>La carne di selvaggina ha sei volte la <strong>concentrazione di ferro<\/strong> del manzo o del maiale<\/li>\n<li>La carne di selvaggina ha il doppio degli <strong>acidi grassi polinsaturi<\/strong> del salmone<\/li>\n<li>La carne di selvaggina ha un <strong>contenuto di grasso dal 2 al 4%<\/strong>.
